Genius Easy Vinaigrette

This dressing tastes so good everyone will think you’re a culinary wizard. It takes 30 seconds to make, 15 seconds if you already have a clean jar.
Ingredients and Technique
Mix equal quantities of
- balsamic vinegar
- olive oil
- real maple syrup.
Shake.
That’s it. You’re done.
The maple syrup from the can seems to taste best to me.
Now, when someone at a dinner party says “Can you throw together a vinaigrette?”, you can answer with peace of mind. For extra security, you could bring your own stash of ingredients and leave them in the car, so you can volunteer to make a dressing before someone asks you to compose a broth or something equally unimaginable.
To stretch it out a little, you could take a few minutes to consider their selection of balsamic vinegars or verify that the oil comes from the first press of the olives. But then people will slot you as a master and ask you to flambé the dessert, which may result in a memorable evening, culminating in an unpleasant event involving fire that survivors will discuss for years after.

Doesn’t this taste really sweet?
Yes, I suppose it does. Maybe it’s more suitable to certain types of salad. Or you could cut back on the maple syrup. I like it because the vinegar tempers the sweetness without being too “vinegary”, and it only takes very little.
As I think about, I probably prefer sweeter dressings. Another of my favorites is the Lime Honey Vinaigrette from Bonnie Stern’s HeartSmart Cooking.
I’m not fond of the taste of salt and sometimes find oil&vinegar dressings, or those with Dijon mustard, too sharp.
